This is the big, keep-forever version.
Introduction
Imagine a mini tart with a golden, puffed, buttery shell that crunches when you bite it, then gives way to juicy, peppery sausage and gooey sharp cheddar that stretches. No complicated sauce, no 10 steps. Just pastry, sausage, cheese, and a creamy binder to hold it all together.
They taste like a sausage biscuit, a mini quiche, and a pizza bite had a baby. Perfect for block parties, breakfast, iftar, game day, or when you need something that feeds a crowd for very little.
Makes 24 mini cups, about 8 to 10 servings as an appetizer.
Ingredients
The magic 4, plus pantry salt and pepper you already have:
The 4 Main Ingredients:
• Pastry for the cups: 1 can, 8 oz, refrigerated crescent roll dough sheet or crescent rolls, or 1 sheet puff pastry thawed, or 24 wonton wrappers. Crescent gives that golden flaky rim you see in your photo
• Sausage: 1 lb, 450g, ground breakfast sausage. Use beef breakfast sausage, chicken sausage, or turkey sausage for halal. If you use merguez, remove casings and crumble it
• Cheese: 1 1/2 cups, 170g, shredded sharp cheddar or a cheddar mozzarella mix, plus a little extra for topping
• Binder: 4 oz, 115g, cream cheese softened. This is what makes it creamy and holds the sausage together so it does not fall out. Some families use 2 large eggs beaten instead for a more quiche-like version, both work
Pantry helpers:
• 1/2 tsp black pepper, 1/4 tsp garlic powder, pinch of salt, optional
• Nonstick spray or butter for muffin tin
Instructions – Step by Step
1. Prep the tin: Preheat oven to 375F, 190C. Lightly grease a 24-cup mini muffin tin very well. This is critical or they will stick.
2. Cook the sausage: In a skillet over medium heat, crumble and cook sausage until fully browned and no pink remains, 6 to 8 minutes. Drain all excess fat. Let cool 5 minutes.
3. Make the filling: In a bowl, mix warm but not hot sausage with softened cream cheese until combined, then stir in 1 1/2 cups shredded cheddar, pepper, and garlic powder. It should be a thick, cheesy, sausage-studded mixture.
4. Form the cups: Roll out crescent dough and pinch seams together to make one solid sheet. Cut into 24 squares, about 2 inch each. Press each square into a mini muffin cavity, pushing dough up the sides to form a cup. The corners will stick up and turn golden and flaky, exactly like your photo.
5. Fill: Spoon about 1 heaping tablespoon of sausage cheese mixture into each cup. Do not overfill or cheese will bubble over. Sprinkle a tiny pinch of extra cheddar on top.
6. Bake: Bake 14 to 18 minutes until pastry is deep golden brown and cheese is bubbly with browned spots. The edges should look like your picture, crisp and ruffled.
7. Rest: Let cool in tin 5 minutes. Run a small knife around edges to release. Serve warm.
Methods – Three Ways to Make Them
Method 1: Classic Oven – Best for Parties:
The method above. Gives the most even, puffed, golden crust.
Method 2: Air Fryer – Extra Crispy:
Form cups in silicone muffin liners that fit your air fryer. Air fry at 350F, 175C for 8 to 10 minutes. They get incredibly crisp.
Method 3: Make Ahead / Freezer:
Assemble unbaked cups, freeze on tray, then transfer to a bag. Freeze up to 2 months. Bake from frozen at 375F for 20 to 22 minutes. Perfect for Ramadan or when guests come suddenly.
History
This recipe has no fancy French origin. It was born in American church cookbooks and community potlucks in the 1980s and 1990s.
When refrigerated crescent rolls and pre-shredded cheese became cheap and common, busy moms invented the muffin tin cup trick to turn breakfast sausage into something you could eat with your hands at a block party. It spread through PTA meetings, tailgates, and holiday brunches because it used only cheap, available ingredients and everyone, from kids to grandparents, loved it.
The version you have, with the dark browned sausage bits peeking through melted cheese in a puffed pastry cup, is the modern viral version that took over Facebook and TikTok around 2020 as the 4-ingredient appetizer that never lasts.
Benefits
1. Unbeatable effort to wow ratio: 4 ingredients, 20 minutes, one muffin tin. Looks like you spent hours.
2. Budget friendly: Sausage, cheese, and canned dough are some of the cheapest proteins and carbs per serving.
3. Filling and high protein: Each two bite cup has protein from sausage and cheese, fat for satiety, and carbs for energy. People actually get full.
4. Crowd pleaser: No knives, no plates needed. Kids love them, adults fight over them, as your neighbor proved.
5. Infinitely adaptable: Add a pinch of chili, a bit of onion, or swap cheddar for pepper jack.
Formation and Plating – How to Get That Photo Look
Your photo has that perfect formation because of two tricks:
• Do not flatten the dough too thin. Let the corners stick up ruffled. They brown first and create that flower shape.
• Sausage on top of cheese, then a little cheese on top of sausage. That way you see the browned crumbles like in your image, not hidden.
• For block party plating: Place them tight together on a white platter, sprinkle fresh chopped parsley or chives in between for color contrast. Serve warm, not hot, so cheese is gooey but not burning.
If you want them taller like mini muffins, use wonton wrappers double layered. If you want them flatter like tarts, use puff pastry.
For Lovers – Who Will Love This
For cheese lovers: Extra sharp cheddar gets crispy edges and stretchy center.
For meat lovers: Savory, peppery sausage in every bite.
For busy hosts: You can make 48 in one hour and they disappear faster than anything else.
For breakfast lovers: Make them with eggs added to the filling and they become the best breakfast prep.
Conclusion
This is why one tray is never enough. Four ingredients, one muffin tin, and you have little golden cups that are crunchy outside, juicy and cheesy inside, and completely addictive.
