½ cup Shiitake mushrooms, sliced

3 Tbsp Soy sauce

1 Tbsp Mirin (sweet rice wine)

1 Tbsp Sesame oil

1 tsp (plus extra for drizzle) Chili oil

1 tsp Lime juice

¼ cup, chopped Fresh cilantro leaves

1 Tbsp Toasted sesame seeds

½ cup Wood chips (fruit wood, e.g., apple) for smoking

Instructions:
