Ingredients:

1 (about 2½ lbs) Large cauliflower head

2 tbsp White miso paste

1 tbsp Dark soy sauce

1 tbsp Maple syrup

1 tsp Smoked paprika

1 tsp Ground cumin

1 tsp Rice vinegar

1 tsp Toasted sesame oil

1 clove Garlic, minced

1 tsp Fresh ginger, grated

1 tsp Lime juice

1 tsp Yuzu juice (or extra lime juice)

2 tbsp, divided Olive oil

1 tbsp Toasted sesame seeds

2 stalks Scallions, thinly sliced

1 tbsp Fresh cilantro, chopped

Pinch (optional) Red pepper flakes

Instructions:

  4. 4. Brush both sides of each cauliflower steak with 1 tbsp of olive oil, sprinkle lightly with salt and pepper, and place them on the prepared baking sheet.
  5. 5. Generously spoon half of the miso‑caramel glaze over the steaks, spreading it with the back of a spoon. Reserve the remaining glaze for the second half of cooking.
