π Introduction
Brioche is one of those breads that feels extra special. π₯β€οΈ
Unlike ordinary bread, brioche contains generous amounts of eggs and butter, giving it a tender crumb, rich flavor, and beautiful golden color.
These milk brioche rolls are a slightly more approachable version, using warm milk to create an especially soft dough.
They’re wonderful served warm with butter, jam, honey, scrambled eggs, cheese, or simply eaten straight from the baking tray. π
And let’s be honest…
Fresh bread + melted butter = happiness! π§π₯β€οΈ
π©βπ³ Instructions
1. π₯ Warm the Milk
Heat the whole milk until it reaches approximately 110Β°F (43Β°C).
It should feel warm, not hot.
If the milk is too hot, it can damage the yeast.
π 2. Activate the Yeast
Pour the warm milk into a large mixing bowl.
Add:
βͺοΈ Yeast
βͺοΈ Sugar
Stir gently.
Let the mixture stand for approximately 5β10 minutes.
You may notice a light layer of foam forming on the surface. That’s a good sign that the yeast is active. β¨
π₯ 3. Add the Eggs
Add the room-temperature eggs to the milk mixture.
Whisk gently until combined.
Add the vanilla if you’re using it.
The mixture should look smooth and creamy. π₯π₯
πΎ 4. Add the Flour and Salt
Add approximately 3Β½ cups of the flour along with the salt.
Mix with a wooden spoon or dough hook.
Gradually add the remaining flour as needed.
β οΈ Don’t automatically add all the flour.
Depending on humidity, flour brand, and egg size, the dough may need slightly more or less.
You want a dough that is:
β¨ Soft
β¨ Elastic
β¨ Slightly tacky
β¨ Not extremely sticky
π§ 5. Add the Butter
Add the softened butter a little at a time.
Continue kneading until each addition is incorporated before adding more.
This may take several minutes.
At first, the dough can look messy and greasy.
Don’t worry! π
Keep kneading.
Eventually it should become smooth, elastic, and beautifully soft. π§β¨
πͺ 6. Knead the Dough
Knead by hand for approximately 8β12 minutes, or use a stand mixer with a dough hook for about6β8 minutes on low to medium-low speed.
The dough should become smooth and elastic.
π©βπ³ Baker’s test:
Take a small piece of dough and gently stretch it.
If it can stretch thinly without immediately tearing, the gluten has developed nicely.
π₯£ 7. First Rise
Place the dough into a lightly greased bowl.
Cover with plastic wrap, a lid, or a clean kitchen towel.
Let it rise in a warm, draft-free place for approximately 1β2 hours, or until roughly doubled in size.
β° Rising time depends on the temperature of your kitchen.
π₯ 8. Shape the Rolls
Once the dough has doubled, gently press it down to release excess air.
Transfer it to a lightly floured surface.
Divide the dough into approximately 12β16 equal pieces.
Shape each piece into a smooth ball by pulling the edges underneath and gently rolling it against the work surface.
Place the rolls into a greased baking dish or lined baking tray.
Leave a little space between them.
β° 9. Second Rise
Cover the shaped rolls again.
Allow them to rise for approximately 30β60 minutes.
They should become visibly puffy.
Don’t rush this stage! β€οΈ
A good second rise helps produce soft, airy rolls.
π₯ 10. Apply the Egg Wash
Whisk together:
π₯ 1 egg
π₯ 1 tablespoon milk
Brush the mixture gently over the tops of the rolls.
This gives them that gorgeous shiny, golden-brown finish. β¨π₯
π₯ 11. Bake
Preheat your oven to 350Β°F (175Β°C).
Bake the rolls for approximately 18β25 minutes, depending on their size.
They should become beautifully golden brown.
The kitchen will smell absolutely incredible! π€€π₯π§
π§ 12. Finish With Butter
As soon as the rolls come out of the oven, brush the tops lightly with melted butter.
This adds:
β¨ Shine
β¨ Richness
β¨ Softness
β¨ Extra buttery flavor
Let them cool for a few minutes before serving.

π¨βπ³ Cooking Methods
π₯£ Traditional Hand-Kneading
Mix the dough in a bowl and knead by hand until smooth and elastic.
This method is perfect if you enjoy working directly with the dough.
βοΈ Stand Mixer Method
Use the dough hook to develop the gluten.
This is especially convenient because brioche dough is rich and can be somewhat sticky.
βοΈ Overnight Method
For deeper flavor, you can place the covered dough in the refrigerator after the first rise and letit rest overnight.
The next day, allow it to warm slightly, shape the rolls, let them rise, and bake.
This can make breakfast preparation much easier! π π₯
