180 g Ramen noodles (fresh or dried)
400 ml Coconut milk (full‑fat)
400 ml Vegetable or chicken broth
1 medium (about 150 g) Ripe mango, peeled and sliced into thin strips
1 tbsp Fresh ginger, minced
2 Garlic cloves, minced
1 tsp (adjust to taste) Red Thai chili paste or sambal oelek
2 tbsp Soy sauce
1 tsp Fish sauce (optional)
1 tbsp Lime juice
1 tsp Sesame oil
2 tbsp Fresh cilantro leaves, chopped
2 tbsp Scallions, thinly sliced
1 tbsp Toasted shredded coconut
½ cup Bean sprouts

Instructions:

- 2. Add the minced ginger, garlic, and chili paste to the broth. Reduce heat to a simmer and let the flavors meld for 3–4 minutes.
- 3. Season the broth with soy sauce, fish sauce (if using), lime juice, and a pinch of salt and pepper. Taste and adjust the heat or acidity as desired.
- 4. While the broth simmers, cook the ramen noodles according to package instructions (usually 2–3 minutes for fresh noodles, 4–5 minutes for dried). Drain and rinse briefly under warm water to stop cooking; set aside.
- 5. In a separate small skillet, heat the sesame oil over medium heat. Add the sliced scallions and toast for 30 seconds until fragrant but not browned; set aside for garnish.
- 6. To assemble, divide the cooked noodles between two deep bowls.
