Ingredients:

12 ounces (340 g) Spaghetti or linguine

1 cup (240 ml) Coconut milk (full‑fat)

2 tablespoons Thai red curry paste

1 tablespoon Soy sauce

1 teaspoon White miso paste

1 teaspoon Fish sauce

8 ounces (225 g) Button or shiitake mushrooms, sliced

1 medium Red bell pepper, thinly sliced

1 small Yellow onion, diced

3 Garlic cloves, minced

1 tablespoon Fresh ginger, grated

1 tablespoon Lime juice

2 tablespoons Olive oil or neutral oil

¼ cup Fresh cilantro leaves, chopped

2 tablespoons Toasted crushed peanuts

Instructions:
