Prep Time: 30 minutes

Cook Time: 4 hours 30 minutes

Servings: 4

Ingredients:

2 lb (≈900 g) Beef brisket (bone‑in)

3 Tbsp White miso paste

3 Tbsp Soy sauce

2 Tbsp Mirin

2 Tbsp Brown sugar

1 Tbsp Rice vinegar

3 cloves Garlic, minced

1 Tbsp Fresh ginger, grated

1 tsp Black pepper

2 cups Water

2 Tbsp Neutral oil (e.g., canola)

8 buns Steamed bao buns (store‑bought or homemade)

½ cup Pickled cucumber ribbons

½ cup Pickled carrot matchsticks

¼ cup Fresh cilantro leaves

2 Tbsp Scallions, thinly sliced

2 Tbsp Sriracha mayo (optional)

Instructions:

  1. Trim excess fat from the brisket and pat it dry; season generously with black pepper.
  2. 2. Heat the oil in a large Dutch oven over medium‑high heat and sear the brisket on all sides until deep brown, about 3–4 minutes per side. Remove and set aside.
  3. 3. In a bowl whisk together miso paste, soy sauce, mirin, brown sugar, rice vinegar, minced garlic, and grated ginger until smooth.
  4. 4. Return the brisket to the pot, pour the miso‑soy mixture over it, then add water. Bring to a gentle boil, cover, and reduce heat to low.
  5. 5. Simmer for 3 hours, or until the meat is fork‑tender. Check occasionally and add a splash of water if the liquid evaporates too quickly.
  6. 6. Transfer the cooked brisket to a cutting board and shred with two forks. Strain the braising liquid, return it to the pot, and simmer uncovered for 15‑20 minutes until thickened into a glossy glaze.
  7. 7. Add the shredded brisket back to the pot and toss to coat; continue cooking, stirring frequently, until the meat is caramelized and the glaze clings, about 5‑7 minutes. Remove from heat.
  8. 8. While the brisket caramelizes, steam the bao buns according to package instructions (about 8‑10 minutes) and keep them covered to stay soft.
  9. 9. To assemble, split each bao bun open, place a generous mound of miso‑caramelized brisket, then top with pickled cucumber ribbons, pickled carrot matchsticks, a few cilantro leaves, and scallion slices. Drizzle with sriracha mayo if desired.
  10. 10. Serve the bao warm, arranged on a slate serving board with extra pickles and cilantro on the side.
